Cookies and Roast Dinner

Happy New Year 2015 and hope everyone had a great holiday and a great beginning of the year.  Can't believe that we are half way through January 2015 and thought to start my year off I am going to post my favourite day of the week - Friday ^^. 
There are 7 days a week and you will always find everyday starts with new beginning and full of surprises.  But, my favourite day of the week is Friday, and the reason is because it is my 'cheat' meal day. 
I tried to eat healthy most days but when it comes to Friday, it is one day where I get to spend my time in the kitchen and cook something I fancy or have been craving.  Therefore, this week I decided to cook Roast Chicken - a very simple dish that I teamed with steamed vegetables, carrots, parsnips and roast potatoes.





Besides the Roast Dinner, I managed to find some time to bake some cookies as a dessert.  They were not gluten free, but I did add some oats and some other things to balance them out.  It seems naughty but well if you are going to have some cheat meal you might as well do it right.  Afterall, you only live once!!! ^^ xoxo
